Cloudy’s Hide the Pepperoni Pizza

So I’m lookin’ at this thing, right? Nice pie. Cheese looks clean. Too clean. That’s when I know something’s off. Then I take a bite - bam. Pepperoni. Hidin’ under the cheese like it’s got a warrant out for its arrest. That’s a sneaky move. That’s a pie that don’t wanna advertise what it’s carryin’. On the surface? Straight-laced. Underneath? All meat and spice, makin’ a run for it the second you lean in. I don’t love surprises, but I respect the hustle. Keeps the cheese from burnin’, keeps the meat from dryin’ out. Quiet operator. I like my pepperoni the way I like my suspects: out in the open, where nobody’s pretendin’ they’re somethin’ they’re not… and don’t get cute with me again.”

Ingredients

for one 12” pie

  • 1 lb pizza dough

  • 1 stick pepperoni

  • 1 cup Pizza Pete’s Pizza Sauce

  • 5 slices provolone cheese

  • 1 1/2 cups grated mozzarella cheese

  • 1/4 cup parmesan cheese

  • 1 tsp dried oregano

  • 1 tsp red pepper flakes

Directions

  1. Preheat oven to 500 degrees F

  2. Roll out the pizza dough to a 12” round

  3. Grate the stick of pepperoni using the medium holes on a box grater

  4. Spread a thin layer of pizza sauce on the dough, leaving an inch uncovered around the edge. Top pizza sauce with grated pepperoni, then provolone cheese, mozzarella, and finally parmesan. Sprinkle dried oregano and red pepper flakes on top of the cheeses.

  5. Bake pizza for 12 minutes on a pizza stone or cookie sheet. Remove from oven and cut into eight slices.

  6. Serve.
