Ebirah’s Lobster Sandwich
After a busy day of fighting Kaiju and freeing the locals on Letchi Island, this hearty sandwich is tasty enough to satisfy even Godzilla. Crisp chicken fried buttermilk lobster tails on a soft broiled parmesan bun smothered in creamy lemon garlic aioli. Topped with smoky bacon, ripe tomato, avocado, and basil even Mothra will make the trip for a bite.
Ingredients
for two sandwiches
2 Frozen Lobster Tails (thawed)
1/4 cup mayonnaise
1 tsp lemon zest
1 tsp lemon juice (plus 1 tsp more or lemon wedge)
1 clove garlic
1/2 tsp garlic powder
Salt, Pepper, and Cayenne (to taste)
2 soft rolls
2 tsp unsalted butter
2 tbsp Parmesan cheese
1 cup flour
1/2 cup butter milk
1 tsp hot sauce
Olive oil (for frying)
1/2 ripe avocado (sliced)
4 ripe tomato slices
4 strips cooked bacon
4 large basil leaves
Directions
Using kitchen sheers, cut down the middle of the back of the lobster’s shell. Separate the meat from the shell and remove the tail from the lobster
Devein and butterfly the lobster tail
Using a meat tenderizer, pound the butterflied tails to about 1/8” thick
In a small bowl combine the mayonaise, lemon zest, lemon juice, garlic through a garlic press, and garlic powder. Add salt and pepper to taste.
Slice your rolls in half and butter the tops and bottoms of your rolls. Coat evenly with parmesan cheese.
Broil the rolls 2-3 minutes or until golden brown
Set up a breading station with one bowl containing the flour and one with the buttermilk and hot sauce combined. Sprinkle approximately tsp of the buttermilk mixture in little droplets into the flour mixture and stir together to create little clumps of dough in your flour for an extra crunch coating.
In a small frying pan heat the olive oil to 350 degrees.
Season the lobster meat with salt, pepper, and cayenne. Dredge the meat in the flour, followed by the buttermilk, and once again in the flour.
Fry the breaded lobster in the olive oil until golden brown. Approximately 2-3 minutes per side. Drain the fried lobster on paper towels, season with salt and lemon juice.
Assemble the sandwich by coating each of the broiled side of the roll with the mayonnaise mixture.
Place the lobster on the bottom roll followed by half the avocado slice, 2 strips bacon, 2 slices of tomato, and 2 torn basil leaves. Place top of roll on sandwich. Repeat for second sandwich.
Serve.
