Pizza Pete’s Pizza Sauce

This sauce? This sauce isn’t just on the pizza. This sauce is the pizza. It’s got tomatoes that woke up this mornin’ knowing they were born for greatness. Slow-simmered, perfectly seasoned - sweet, tangy, just a little dramatic. Like it’s singin’ an opera right there on the crust. You don’t rush this sauce. You respect it. You spread it gently, evenly, like you’re tucking the pizza in for the night. Every bite says, ‘Relax. You’re safe now. Pizza Pete’s got you.’ Because a pizza without great sauce is just bread wearin’ cheese. And I don’t serve bread wearin’ cheese. Pizza Pete’s sauce… is the soul of the slice.

Ingredients

  • 1 tbs olive oil

  • 1/2 onion

  • 3 cloves garlic

  • 3 anchovies

  • 1/2 tsp black pepper

  • 1/2 tsp kosher salt

  • 1/2 tsp red pepper flakes

  • 1 tsp oregano

  • 1 tbs tomato paste

  • 1/4 cup red wine

  • 1 1/2 cups tomato puree

  • 3 large basil leaves

Directions

  1. Heat a small sauce pan over medium heat

  2. Dice the onion and garlic and add to the heated sauce pan with the olive oil, anchovies, salt, pepper, red pepper flakes, and oregano. Cook until onions are translucent.

  3. Add the tomato pasted and stir to combine. Cook 3-5 minutes.

  4. Deglaze the pan with the red wine scraping up any tomato paste off the bottom of the pan. Add the tomato puree and using an emulsion blender puree the ingredients together.

  5. Chiffonade the basil and add to the sauce. Simmer on low for 30 minutes

  6. Use on pizza, cutlets, or pasta.
