My Big Fat Greek Freis

Okay, so… I know it sounds like a lot. I mean, potatoes, right? Very American. But then you put hummus because chickpeas are very good for you, and a little Greek yogurt instead of sour cream, because it’s healthier… and creamier. And the hot sauce, just a little, because life should have some spice, yes? And feta, because without feta, what are we even doing? At first you think, ‘This shouldn’t work.’ And then you try it and you think, Oh. This is what happens when cultures get married.

Directions

  1. Double fry steak fries in 350 degree F neutral oil. Drain fries from oil and immediately season fries with fry salt and red wine vinegar.

  2. Plate fries and and using a piping bag, or plastic sandwich bag with a cut corner, pipe the hummus and greek yogurt in thin strips over the fries. Top with Sriracha, feta crumbles, oregano, and squeeze of lemon juice from the lemon wedge.

  3. Serve immediately
