Rhythm Fried Scallops
Now this…this is how you treat a scallop. You don't bury it under a pile of seasoning trying to prove how clever you are. You give it a light coating, fry it until it's this beautiful golden brown…and let the scallop do the talking. That's it. Hear that crunch? That's the first thing you notice. Then the crust gets out of the way. And what's left is sweet, tender meat that's still juicy enough to remind you it came out of the ocean…not a freezer. Scallops are funny. They're delicate. Push them thirty seconds too long in the fryer and they turn into rubber. Get them right…they're softer than butter with just enough bounce to let you know they're fresh. You don't need fancy sauces chasing after something like this. Maybe a squeeze of lemon if you're feeling generous. Good seafood has a way of bringing you back to where it came from. The salt air, the boats, the folks who got up before sunrise so somebody else could have a meal worth remembering. And when it's fried this well…the only mistake you can make is not ordering another basket.
Ingredients
1 lb fresh scallops
2/3 cup flour
1/3 cup potato starch
2 egg whites
1 tbs fish sauce
2 tsp hot sauce
1 cup plain dried bread crumbs
4 cups neutral oil for frying
Directions
Heat oil in a large dutch oven or deep fryer to 350 degrees F.
Remove the side muscle from the scallops. Season with Andrew’s French Fry Emporium Seasoning.
Set up a breading station with the flour and potato starch whisked together in one bowl, egg whites, fish sauce, and hot sauce whisked together in an other bowl, and the plain dried bread crumbs in the last bowl.
Place the seasoned scallops in the flour mixture to coat, followed by the egg white mixture, and finally coat in the bread crumbs. Fry scallops for about three minutes in the oil or until golden brown. Remove from oil, allow to drain on paper towels, and season with a pinch of salt.
Serve with french fries or onion rings.
