Mr. Limpet’s Marinade
Well now… this is quite something, isn’t it? Anchovy and capers! Why, that’s practically a reunion of old sea acquaintances. Briny, determined little fellows. Reminds me of home. Oh my… horseradish! That certainly makes itself known. Brisk! Very brisk. And the garlic, good heavens! positively commanding. But then the parsley and shallot… they soften things. Civilize the whole affair. The mustard and green peppercorn give it a spirited backbone. It’s bold, certainly. But balanced. Like the tides, strong currents, gentle swells, all working together. Yes… I think this marinade knows exactly what it’s doing.
Ingredients
4 anchovy fillets
1 shallot
2 cloves garlic
1 tsp green peppercorn
2 tbs grated horseradish
1 tbs capers
1/2 cup parsley
1 tsp celery salt
Directions
In a food processor, add the anchovy, shallot, garlic, green pepper corn, horseradish, capers, parsley, and celery salt and puree into the marinade
