Curly’s S’more Ice Cream Sandwiches

The perfect ice cream desert to go with your late summer cookout. Ira and Barry agree, whether it’s franks and beans or grilled sea bass and asparagus - this is the ice cream to pair. Woof!

Ingredients

for 12 Sandwiches

Ice Cream

  • 1 bag mini marshmallows

  • 3 cups half and half

Sandwich

  • 12 graham crackers (Trader Joes preferably)

  • 1 bag mini chocolate chips

  • 1 batch marshmallow ice cream

Directions

  1. For the ice cream: Place mashmallows in a heat proof container, bottom of pan lined with parchment paper.

  2. Using a charcoal grill ignite a small amount of charcoal.

  3. Using a blowtorch or broiler, brown the marshmallows to golden

  4. Place browned marshmallow in their container on the charcoal grill over indirect heat and cover while charcoal is still igniting and smoking for 10-15 minutes

  5. Remove marshmallows from grill and scrape into a kitchn aid mixer bowl (the parchment paper will make it easier to remove the marshmallows from the container)

  6. Add half and half to the marshmallows and mix on low until marshmallows are disolved. About 10 minutes.

  7. Place mixture in an ice cream maker and make ice cream to machine’s instructions

  8. Place frozen ice cream in a 9x9 pan lined with parchment and freeze

  9. When ice cream is frozen, cut slices of ice cream to size of your graham crackers and place mini chocolate chips in a shallow bowl

  10. Place ice cream slices on graham cracker and top with another

  11. Roll and press the sides of the ice cream sandwich into the chocolate chips

  12. Wrap with parchment paper and freeze 4-5 hours (this will make the graham crackers less brittle)

  13. Serve
