Best in Show Biscuits and Sausage Gravy

Well, now… biscuits and sausage gravy. That’s a lovely little dish. Real comforting. The biscuit’s the foundation. Light, fluffy, a little crumbly, sort of like a good sporting dog’s coat. You want it soft but with just enough structure to hold everything together. And then you’ve got the sausage gravy… creamy, peppery, speckled with those little bits of sausage. That’s the personality of the dish right there. Warm, a little bold, but very friendly. My dog Hubert once ate half a plate of biscuits and gravy at a county fair in Mobile. Took it right off the picnic table while I was talking to a judge about hound posture. Didn’t seem to slow him down a bit. So yes… biscuits and sausage gravy. Simple ingredients, handled properly. Very satisfying. Not flashy, but sometimes the best things aren’t.

Ingredients

  • 1 cup flour (plus 2 tbs more)

  • 1 cup bread flour

  • 4 tsp baking powder

  • 1 tsp baking soda

  • 3/4 tsp salt

  • 2 tbs butter

  • 1 tbs shortening

  • 1 tbs bacon fat

  • 1 cup buttermilk

  • 4 Weiner Kingdom Sausage Patties

  • 2 tbs butter

  • 1 tsp black pepper

  • 1 1/2 cup whole milk

Directions

  1. Pre-heat your oven to 450 degrees F.

  2. In a large bowl, combine flours, baking powder, baking soda and salt. Using pastry blender, cut the butter, shortning, and fat into dry ingredients until mixture looks like crumbs. Pour in the buttermilk into the flour mixture and stir to combine.

  3. Place the dough onto a lightly floured work surface and roll out to a 12 inch by 12 inch and fold it into itself in thirds. Repeat two more times and roll the dough out to a one inch thickness. Cut your biscuits using a biscuit or round cutter and place biscuits on a baking sheet with a silicone mat. This should yield eight biscuits. Cook biscuits for 15 minutes.

  4. In a skillet over medium heat, place Weiner Kingdom Sausage Patties and break them up into small rice size pieces as they brown, about 5 minutes. Add in the remaining 2 tbs flour and butter, stir to combine and cook and additional 2 minutes. Stir in the milk and black pepper, bring mixture to a boil to thicken gravy.

  5. Plate biscuits and top with sausage gravy.

  6. Serve.
