Hanover Chili
Boy, this is some good-looking chili. And it’s red. Really red. I guess that’s why they call it Red Chicken Chili. Unless the chicken was red. No, that’d be concerning. You start with red onion and red peppers. So right away, you’ve got two red things working together. Back home in Hanover, we called that teamwork. Then you’ve got fire-roasted tomatoes. I always wondered how they roast tomatoes over a fire without them falling through the grill. Probably little tomato baskets. Red kidney beans. Those make sense. And black bean salsa. Wait. Black? I thought we were doing red. Well, everybody’s welcome. Then there’s garlic. That gives the whole thing a nice savory kick. Mmm. And those fire-roasted tomatoes and black bean salsa give it some heat, but not the kind where you have to call Sam and ask where he keeps the extinguisher. And here’s the chicken. Rotisserie chicken’s already cooked, which saves a lot of time. And probably explains why mine never stops spinning when I put it in the oven. So you’ve got sweet red peppers, onions, smoky tomatoes, hearty kidney beans, spicy black bean salsa, garlic, and tender chicken all together in one bowl. It’s warm, hearty, a little spicy, and really satisfying.
Ingredients
1 rotisserie chicken
1 bay leaf
1 red onion
1 red pepper
3 fresno peppers
4 cloves garlic
1 tbs olive oil
1 tsp kosher salt
1 tsp black pepper
1/4 tsp cayenne
1 tbs chipotle chili powder
1 10 oz can fire roasted Ro-tel tomatoes with chilis
1 16 ox jar black bean salsa
1 16 oz can kidney beans
1 cup chopped cilantro
1 cup sour cream
1 cup shredded Monterey Jack and cheddar cheese bland
1 lime
Directions
Remove the meat from the rotisserie chicken and place the bones and skin in a pressure cooker with two cups of water. Cook on high pressure for 20 minutes with natural release to make a quick chicken stock. Strain liquid from the solids for the stock.
Chop the peppers and onion. Mince the garlic and the cilantro, reserve some cilantro for garnish. In a large stock pot over medium heat add the olive oil and vegetables, season with salt, pepper, cayenne, and chili powder. Saute until the vegetable become soft, about 7-10 minutes.
Add the chicken stock to deglaze the pan. Then add the kidney beans, black bean salsa, and Ro-tel tomatoes and bring to a simmer. Simmer for ten minutes and add the chicken.
Cut the lime into slices
Serve topped with sour cream, shredded cheese, lime slice, and cilantro as garnish.
