Lobster carbonara. You know what's wonderful about this? It doesn't pretend to be modest. Most people would stop at pancetta. That's already a perfectly respectable pasta. Crispy, salty, smoky...everybody's happy. But then someone says, 'Let's invite lobster.' And suddenly dinner has better connections than most of Washington. Mmm. The lobster is sweet enough that it softens the saltiness of the pancetta without getting lost. That's harder to pull off than people think. And this sauce... rich, creamy, loaded with Parmesan. It coats every strand without becoming heavy. The pancetta gives you these little bursts of crispness, the lobster stays delicate, and somehow neither one is trying to outshine the other. Then the basil comes in at the end…fresh, clean…and the lemon zest…that's the smart decision. Just enough brightness to remind you this isn't merely an indulgence. It's a balanced indulgence. You know, the best meals are a little like the best marriages. They look effortless because someone has done an extraordinary amount of work behind the scenes. Of course...unlike some marriages, this carbonara actually keeps all of its promises. And that's why nobody leaves the table angry.
4 A.M. Carbonara
Ingredients
1/2 lb fresh lobster meat
4 oz pancetta
4 egg yolks
1/2 cup heavy cream
1 cup Parmesan cheese
1/4 cup minced parsley
4 cloves garlic
1 tsp black pepper
1/2 tsp red pepper flakes
1/4 tsp fresh ground nutmeg
1 lb linguini
1/4 cup chiffonade basil
1 tbs lemon zest
Directions
Slice the pancetta into thin strip. In a fry pan over low heat render out the fat and cook the pancetta until it is crispy, about 10 minutes. Remove pancetta from pan and allow to cool.
In a large bowl, add the egg yolks, Parmesan cheese, heavy cream, parsley, red pepper flakes, nutmeg, and black pepper. Mince the garlic or press through a garlic press and add to the mixture, mix to combine.
Prepare your linguini per package directions in salted water. Remove the linguini from the water and reserve 1/4 cup of the cooking liquid. Add the pasta to the cheese mixture and toss thoroughly. Add the reserved pasta water a tbs at a time to help thicken the sauce. Chop your lobster into bite sized pieces and add to the pasta with the pancetta.
Plate the pasta and top with the basil and lemon zest.
Serve.
