I Just Want Breakfast Sandwich

Okay. Let’s just take a look at this for a second. This is supposed to be a breakfast sandwich. Simple. Eggs, meat, maybe cheese. That’s it. That’s the deal. But no, you’ve got kielbasa now. Fine. I can accept kielbasa. Then a ‘buttery folded omelet’, what does that even mean? It’s eggs. You don’t need a marketing department for eggs. And what is this? Mustard cream cheese? Smoked pepper? Spicy ketchup? When did ketchup need to be spicy? Who asked for that? You’ve got tomato, red onion… all sliding around like nobody’s in charge. And this pretzel roll - look at it. It’s shiny. It’s overconfident…That’s actually… pretty good. It’s got crunch, it’s got heat, the cheese melts right, the kielbasa’s got bite…everything’s…working. But that’s not the point! The point is you shouldn’t have to solve a puzzle to eat breakfast! This is what’s wrong. Too many choices. Too many flavors. Nobody sticks to the basics anymore…I’m finishing it. But I’m not happy about it.

Ingredients

for 2 sandwiches

  • 2 pretzel rolls

  • 2 tsp salted butter (plus 1 tbs more)

  • 1/4 cup cream cheese

  • 1 tbs mustard powder

  • 2 tbs dehydrated smoked Anaheim pepper

  • 1/2 kielbasa cut into 1/4 inch rounds

  • 1 tbs ketchup

  • 1 tsb Sriracha

  • 2 slices American cheese

  • 1 1/4 inch round red onion

  • 2 slices tomato

  • 4 eggs

  • 1/4 tsp black pepper

Directions

  1. Slice pretzel rolls in half and spread the butter on the inside of the rolls. In a skillet, or on a griddle, over medium heat melt griddle the buttered rolls 2-3 minutes or until golden brown.

  2. In a small bowl, combine the cream cheese, mustard, and dried peppers.

  3. In the skillet, or on the griddle, used to toast the rolls, place the kielbasa slices and griddle 2-3 minutes per side, browning the sausage.

  4. In a small bowl, whisk the eggs together with 1 tbs water and the black pepper. Lower your skillet to medium and coat the bottom of the pan with a little of the remaining butter and then divide the last of the butter in half. Divide the egg mixture and cook, at the same time if using a griddle or separately using a skillet, gently whisking in the remaing butter into the egg as it cooks. Fold the sides of the egg once it is almost set into a square the size of your roll.

  5. Spread the cream cheese mixture on the bottom of your toasted pretzel roll and top with half the kielbasa, then with half the red onion and tomato slice seasoned with salt and pepper. Place your omelet on top of the onion and tomato followed by a slice of American cheese. Spread half the ketchup and Sriracha on the top half of the toasted roll and place on the sandwich.

  6. Serve.
