Grilled Pork Chop Express
Now this...this is a serious piece of business. Bone-in center cut. That's nature's way of saying, 'Don't rush it.'Then somebody comes along with fennel, dill, cumin seeds, and bay leaf. That's quite a crew. You wouldn't think they'd all get along. But then again, I've driven a truck through Chinatown while chased by ancient sorcerers, so I've stopped making assumptions. Oh, now we're talking. Mmm. The charcoal gives it that honest, fire-kissed flavor. Not fancy—just the kind that reminds you somebody stood over hot coals and earned this dinner. And then comes the apple wood smoke. Doesn't punch you in the face. It sneaks up behind the pork, puts an arm around its shoulder, and says, 'Relax, pal. I got this.' The fennel gives you a little sweetness, the dill keeps everything fresh, the cumin adds just enough earthy warmth to make you wonder where it's been all your life, and the bay leaf...doesn't say much. Just stands in the corner looking mysterious until you realize the whole room would feel different without it. You know what ol' Jack Burton always says at a time like this? When you've got a charcoal grill, a little apple wood smoke, and a pork chop cooked just right...you don't need magic. You just need a fork. And if an immortal wizard wants the last bite...he's gonna have to beat me to it.
Ingredients
per pork chop
1 1 1/2 -2 inch bone in center cut pork chop
1 tsp fennel seeds
1 tsp dill seeds
1 tsp cumin seeds
1 bay leaf
1/2 tsp kosher salt
1/2 tsp black pepper
1/2 cup apple wood chips (for smoking)
Directions
In a spice grinder, grind the bay leaf, cumin seeds, fennel, seeds, and dill seeds to a powder.
Pat the pork chop dry and season with salt and pepper. Rub the. chop with the spice mixture.
Place the chop on a wire rack and refrigerate for at least 4 hours.
When ready to cook, remove the chop from the refrigerator and allow to come up to room temperature, about 10-15 minutes. Start your charcoal grill and arrange coals for direct and indirect grilling..
Grill the pork chop over high heat coals for 3-4 minutes per side. Move the chop to indirect heat and add the apple wood chips on to the coals. Smoke the chop over indirect heat until it reaches an internal temperature of 150 degrees F. Remove chop from grill and tent with aluminum foil, allow to rest for 5-10 minutes.
Serve.
