Remarkable… most remarkable. A crab salad, already a creature of the sea, disassembled and repurposed, now subjected to further transformation. Nutmeg and lemon zest… curious additions. Aromatic agents, altering not just flavor, but perhaps… behavior. The parsley, onions, radishes—sharp, vegetal elements. They introduce contrast. Tension. One might even say… instability. And yet, it is contained. Bound within bread. As though mankind believes it can control such combinations… such forces…fascinating. The sweetness of the crab, the brightness of citrus, the warmth of nutmeg… they coexist. Uneasily, perhaps, but effectively. Yes… very effective. One cannot help but wonder… what this sandwich might become… given time.
Attack of the Crab Salad
Ingredients
1 cooked Dungeness Crab
1/4 tsp nutmeg
1/2 tsp lemon zest
1/4 tsp white pepper
1/4 cup mayonnaise
4 slices white bread
2 thin slices of Vidalia onion sliced on a mandolin
1 radish sliced on a mandolin
1/4 cup of parsley minced
1/2 tsp celery salt
1 tbs softened butter
Directions
Remove all the meat from the crab and place in a bowl. Add mayonnaise, nutmeg, lemon zest, and a pinch of salt to the crab meat and toss gently to coat.
Cut the crusts off the white bread. Mix together the celery salt and softened butter. and spread on each slice of the bread. Top the buttered bread with the parsley. Top two slices with the onion slices and two slices with the radish slices.
Place half the crab mixture on each slice of the onion topped bread and top crab mixture with the radish topped bread.
Serve.
