TT’s DeKalb County Prison Brownies
Now listen here, TT made these brownies like she was mad at somebody. I took one bite and had to sit all the way down. These ain’t brownies, these is testimonies. They so rich they need a bank account, so chocolatey I thought I was gonna have to call Jesus and a cardiologist. You can’t just eat one of these. One turn into three, three turn into regret, and next thing you know you hidin’ the pan like it’s evidence. I told her, ‘Girl, you put all your feelings in this batter!’ These brownies’ll make you forget why you was mad, why you was sad, and why you came in the kitchen in the first place. Now don’t eat ‘em late at night unless you ready to repent… ’cause they sweet, they thick, and they’ll have you talkin’ to yourself in the mirror. Now hush…gimme one more ‘fore somebody else find out how good these is.
Ingredients
1 cup (2 sticks) unsalted butter
2 cups brown sugar
3/4 cups Dutch-process cocoa
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon espresso powder
1 tablespoon vanilla paste
4 large eggs
1 1/2 cups all-purpose flour
1 cup milk chocolate chips
1 cup semi-sweet chocolate chunks
1 tbsp milk
Directions
Preheat the oven to 325°F.
Lightly grease a 9" x 9” pan. In a saucepan, melt the butter over medium heat.
Stir in the sugar and cook until mixture is bubbling, let simmer for 3-5 minutes or until mixture hits 230 degrees F.
In a large mixing bowl, whisk eggs, cocoa, salt, baking powder, espresso powder, and vanilla until smooth.
Temper the hot butter/sugar mixture and stir until smooth.
Add the flour and stir until smooth.
Let the batter cool in the bowl for 20 minutes and then stir in the chips.
Spread batter into the prepared pan.
Brush top with milk.
Bake for 40 minutes, until the brownie edges are set and a cake tester inserted into the center comes out with just a few moist crumbs clinging to it.
Remove them from the oven and cool on a rack before cutting.
Cut into squares and serve.
