Biollante

A fruity and aromatic winter cocktail with muddled rosemary, gin, ginger, crème de cassis, peppermint syrup, and grapefruit.

Ingredients

  • 2 oz gin

  • 2 oz ginger liqueur

  • 1/2 oz crème de cassis

  • 3 oz grapefruit juice

  • 2-3 sprigs fresh rosemary (plus more for garnish)

  • Demerara sugar cube

  • 1 oz candy cane syrup

  • Grapefruit bitters

Garnish

  • rosemary sprigs dusted with sugar

  • grapefruit bitters

Hardware

  • chilled collins glass

  • cocktail shaker

  • ice

How to make

  • In a cocktail shaker muddle 2-3 rosemary sprigs with the demerara sugar and 2-3 dashes of grapefruit bitters

  • Add the gin, ginger liqueur, crème de cassis, and grapefruit juice to the cocktail shaker with ice

  • Shake 8-10 seconds

  • Double strain into a chilled collins glass with ice

  • Garnish with rosemary sprigs dusted with sugar and grapefruit bitters

  • Serve
