Peanut Butter Banana Banana Banana Muffins

So...these are muffins. Peanut butter. Banana. Honey. Hmmm. Very suspicious. OH. This is not muffin. This is...breakfast weapon. First, you have banana bread. Soft. Sweet. Innocent. Then…PEANUT BUTTER! Why you do this to me?! And peanut butter chips? Inside?! You have hidden peanut butter inside peanut butter muffin. Very clever. And honey... honey makes banana cake all warm and sweet. Like tiny little golden sunshine. Usually I do not trust sunshine. But this? This I trust. Perhaps too much. I will take one more. Maybe three. Minions! Bring me the muffins! And nobody touches them. Especially Kevin. Peanut butter. Banana. Honey. Sometimes, my friends, the greatest evil is eating the entire batch before anyone else gets one.

Ingredients

  • 3/4 cup sugar

  • 1 stick unsalted butter (at room temperature)

  • 2 eggs

  • 1/4 cup honey

  • 3 ripe bananas

  • 1 tbs whole milk

  • 2 cups flour

  • 1 tsp baking powder

  • 1 tsp salt

  • 1 tsp baking soda

  • 2 cups peanut butter chips

Directions

  1. Pre heat oven to 325 degrees F. Grease 12 muffin tins.

  2. In a mixing bowl cream the sugar and butter. Add in the eggs one at a time to fully incorporate, then the honey, bananas, and milk.

  3. In a small bowl whisk together the flour, baking powder, salt, and baking soda. Add half into the banana batter followed by the other half to combine. Once combined, mix in the peanut butter chips.

  4. Distribute the batter equally between the muffin tins and bake for 35 minutes.

  5. Remove from oven and allow to cool for 10 minutes before removing the muffins from the tins.

  6. Serve.
