Do you like Guacamole Sandwich?

What? Are those two over-easy eggs? Yeah. And three strips of bacon? Yeah. Did we just become breakfast best friends? YEP! Two eggs. Over easy. Because scrambled eggs are what you eat when you’ve given up on your dreams. You cut into these and the yolks explode everywhere. Like delicious breakfast lava. And there are three pieces of bacon. Why three? Because two is pathetic and four is showing off. That makes perfect sense. Whoa, whoa, whoa. What is that? Mashed avocado with Monterey Jack cheese. You put cheese…inside the avocado. That’s genius. But you haven’t even seen the best part. The bread is griddled with frico cheddar cheese. You cooked cheese onto the bread. So the sandwich has cheese…inside. And cheese…inside. This changes everything. Crispy cheddar inside. Toasted bread. Monterey Jack avocado. Bacon. Runny eggs. Crunchy, creamy, smoky, cheesy, eggy…I don’t want to overreact…this is better than the Catalina Wine Mixer. Dude. I said it. You can't take that back. I DON'T WANT TO! Bacon. Avocado. Cheese. Eggs. B.A.C.E.!

Ingredients

for two sandwiches

  • 4 slices white bread

  • 1 cup cheddar cheese

  • 1 avocado

  • 1/4 tsp cayenne

  • 1 cup Monterey Jack cheese

  • 4 eggs

  • 6 slices bacon

  • 4 tbs butter

Directions

  1. Remove the meat from the avocado and mash together with the Monterey Jack cheese, cayenne, and a pinch of salt.

  2. Heat a fry pan over medium heat. Butter each slice of bread with 1-2 tsp of butter and top each slice with 2 tbs of the cheddar cheese. Griddle each slice cheese side down for about a minute. Top two of the slices with the avocado mash on top of the griddled cheese. Top the avocado with three slices of bacon and the remaining cheddar cheese.

  3. Add another 1-2 tsp of butter to the pan and fry the eggs until the whites are just set, about 1-2 minutes. Place two eggs, yolk side down on the bacon and cheese. Close the sandwich with the remaining slice of bread cheese side down on top of the eggs.

  4. Use half the remaining butter to griddle the sandwiches, avocado side on the bottom first, until the bread is golden brown, about 2 minutes. Flip the sandwich and griddle the final side with the remaining butter.

  5. Slice and serve.
