Sister Encarnación Apple Nachos
Apple nachos… they are like a little blessing on a plate. Thin slices of apple, crisp and pure, like the gifts of creation itself, layered carefully so everyone may share. Then, over them, a spicy layer of horseradish cheddar cheese fall like grace, and scallions and parsley are sprinkled as though from Heaven’s own hand. It is a simple dish, yet filled with joy, because it takes something ordinary and turns it into something wonderful. They remind me of the children at the orphanage. Each apple slice alone is good, but when they are gathered together, they become something even more delightful. And just as we share food, we share love, laughter, and the spirit of togetherness with cheese.
Ingredients
20 corn tortillas
vegetable oil for frying
1 granny smith apple
1 red apple of your choice
Juice of 1 lemon
1/2 cup parsley
2-3 scallions
1/2 lb applewood smoked bacon
1/2 lb maple bacon
8 oz horseradish cheddar cheese
8 oz monterey jack cheese
Directions
Preheat the oil to 350 degrees F in a large dutch oven or deep fryer.
Cut your corn tortillas into quarters and fry in batches for 3-4 minutes in the oil. Remove from oil and cover with chip seasoning.
To cook the bacon, coat a cookie sheet with 1 tsp of the fry oil and place the bacon on the sheet. Place sheet in a cold oven and heat to 375 degrees F for approximately 15 minutes or until bacon is foamy. Remove bacon from cookie sheet and place on paper towels to drain excess fat. Cut bacon into 1/4 inch pieces
Core and chop apples into 1/4 inch pieces and toss in lemon juice. Chop the scallions and mince the parsley.
Grate the cheeses using a box grater.
Arrange the seasoned chips in a single layer in an oven safe pan. Layer the horseradish cheddar, apples, bacon, scallions, parsley, and then Monterey jack cheese on top of the chips. Repeat for additional layers until all ingredients are used.
Heat nachos in a 375 degree F oven for 5-10 minutes or until the cheese has melted.
Serve.
