Cyclops

A layered cherry and pineapple rum cocktail.

Ingredients

  • .5 oz silver rum

  • 1.5 oz aged jamaican rum

  • .5 oz dry curaçao

  • .75 oz ginger liqueur

  • .75 oz lemon juice

  • .75 oz cherry syrup

  • .5 oz pineapple syrup

Garnish

  • cherry

Hardware

  • chilled martini glass

  • cocktail shaker

  • ice

How to make

  • Add the pineapple syrup and silver rum to a cocktail shaker. Dry shake and pour into chilled martini glass.

  • Garnish pineapple layer with a cherry.

  • Add the cherry syrup, aged rum, ginger liqueur, dry curaçao, lemon juice and ice to the cocktail shaker.

  • Shake well, 10-12 seconds.

  • Double strain into martini glass layering on top of the pineaple mixture by pouring over a barspoon at the edge of the galss.

  • Serve.
