Peanut Butter Jelly Time Cookies

Okay, so these are called Peanut Butter Jelly Time Cookies. Real creative. But fine, yeah... they’re kind of amazing. Soft peanut butter cookie base—dense, rich, like the good kind of college guilt. And right in the center? A dollop of jelly—raspberry or grape, depending on whether your childhood trauma came from PBS or Cartoon Network.

Ingredients

  • 1 ¼ cup firmly packed brown sugar

  • ¾ cup creamy peanut butter

  • ½ cup All-Vegetable Shortening

  • 1 large egg

  • 3 Tbsps. milk

  • 1 tsp. Vanilla Extract

  • 1 ¾ cup all-purpose flour

  • ½ tsp. Salt

  • 2 Cups Peanut butter Chips

  • 2 Cups Chopped Honey Roasted Peanuts

  • 1 egg white

  • 1 Cup Raspberry or Grape Jam

Directions

  1. Heat oven to 375°F.

  2. Beat brown sugar, peanut butter, shortening, egg, milk and vanilla in a large bowl until smooth

  3. Stir flour and salt in a small bowl until blended 

  4. Gradually add to creamed mixture, beating just until blended

  5. Mix peanut butter chips into the mixture.

  6. Roll into 24 (2-inch) balls.

  7. Coat dough balls in egg white and roll ball in chopped honey roasted peanuts to coat

  8. Place on cookie sheet. Use thumb to make small wells in the center of each cookie

  9. Bake 7 minutes

  10. Remove cookies from the oven and immediately fill the wells with jam before returning the cookie sheet to the oven

  11. Bake cookies for an additional minute and remove from the oven to cool
